Protected denomination of origin

The centenary olive trees, from which their juice is extracted, are integrated in a singular habitat, formed by different varieties of vegetables which preserve this enclave´s biodiversity. Cultivated with maximum respect for the environment, with ecological certificate and of the D.O. (origin denomination) Poniente de Granada. The early recollection of the olive and its immediate cold grinding, guarantees maximum quality and fruity of the oil.

Elaborated with this variety, autochthon of Granada, introduced in the Iberian Peninsula in the first quarter of the VIII century. Only 10.000 hectares with these olive trees specimen remain, unique in the world, with an average antiquity of more than 400 years and a grandiose and solemn presence above the landscape.

Naturally excepcional

Zajarí is an evocative oil with a color and texture typical of another time. With a fruity sweet green, bitter and spicy in medium intensity and with notes which reminds of green apple, fresh grass, tomato plant, nuts and strawberry.
